Recipe: Chicken Ghee Roast

roast chickenIf you have not tried it yet, you have missed something major in your life. It is a delight for all the chicken lovers, and is said to have been originated from Mangalore, in South India.

Below is the quick recipe of chicken ghee roast:

⦁ Pour ghee in a pressure cooker
⦁ Add a teaspoon of turmeric powder, and two tablespoon of garlic paste
⦁ Add chicken pieces (500 gm), and cook it for 5-6 minutes
⦁ Once the chicken starts to cook, add 2 cups of water, and pressure cook it until two whistles
⦁ Once done, separate the broth from the chicken
⦁ In another pan, dry roast Kashmiri red chillies, coriander seeds, fennel seeds, black peppercorns, 4-5 cloves, one cinnamon stick, and one star anise
⦁ Once roasted, put it into a grinder, with 3-4 tablespoons of lime juice, 4-5 garlic pods, and once inch of ginger. Grind it to make a smooth paste
⦁ Heat ghee in another pan, and add the paste
⦁ Once the paste starts to cook, add half a cup of curd and cook it for 2-3 minutes
⦁ Then add the chicken broth and bring it to a boil
⦁ Once the gravy starts to reduce, and the oil separates, add the cooked chicken pieces
⦁ Add salt to taste, and curry leaves. Cook until the chicken is completely cooked
⦁ Chicken ghee roast is ready. Serve it hot with any bread of your choice
