- 150 gms Del Monte Pitted Green Olives
- 150 gms Del Monte Pitted Black Olives
- 200 gms Del Monte Extra Virgin Olive Oil
- For Stuffing
- 100 gms Grated Mozzarella Cheese
- 1 tbsp Chilli Pepper Flakes
- 1 tbsp Parsley
- 1 tbsp mixed herbs
- 1 tbsp Finely Chopped Garlic
- For Batter
- 1 cup Refined Flour
- ½ cup Corn Flour
- Salt & Black Pepper to taste
- Water as required
- In a bowl add all the ingredients for stuffing and mix well. Stuff pitted olives with this mix.
- In a separate bowl add all the ingredients for the batter and mix well.
- Spread breadcrumbs on a plate & heat oil in a pan.
- Dip stuffed olives in the batter, roll them in breadcrumbs and fry.
- Sprinkle some parsley and serve hot.
